A creamy, high-protein treat that tastes way more indulgent than it actually is.
Yes, cottage cheese ice cream.
Before you judge it—blend it. Cottage cheese turns surprisingly smooth and creamy when blended, making it an easy base for a frozen treat that's sweet, satisfying, and packed with protein.
And once you have the base down, you can take it in basically any direction you want.
Add everything to a high-speed blender or food processor and blend until completely smooth and creamy. Pour into a freezer-safe container and freeze for 2–4 hours, stirring once or twice if desired. Let it sit at room temperature for a few minutes before scooping.
Then comes the fun part…
Add: 1/2 cup strawberries, 1 tbsp graham cracker crumbs, optional 1 tbsp cream cheese.
Blend the strawberries and cream cheese into the base. Swirl in the graham cracker crumbs after blending.
Topping idea: Fresh strawberry slices + extra graham cracker crumbs.
Add: 1 tbsp cocoa powder, 1 tbsp peanut butter, 1–2 tsp maple syrup (to taste), optional mini chocolate chips.
Blend the cocoa and peanut butter into the base. Stir in chocolate chips before freezing.
Topping idea: Peanut butter drizzle + flaky salt.
Add: 1 tbsp honey, 1/2 tsp cinnamon, 1/4 tsp vanilla, optional chopped walnuts or pecans.
Blend everything together and stir in the nuts before freezing.
Topping idea: Honey drizzle + cinnamon + toasted nuts.
This is where cottage cheese ice cream really shines.
Cottage cheese gives the base a serious protein boost, making this a fun way to work more protein into your day without eating another chicken breast.
Want even more protein? Add a scoop of vanilla protein powder to the base and add a splash of milk if you need to thin it out.
You can also adjust the sweetener and toppings depending on your goals.
The point isn't to make dessert "perfect." It's to make something delicious that also fits into the way you're eating.
This one is basically begging to be made with homemade ingredients.
Homemade cottage cheese? Absolutely. Fresh strawberries from the garden? Yes. Your own raw honey? Even better.
And don't feel like every ingredient has to come from your kitchen. Maybe you're using store-bought cottage cheese but adding your own berries and honey.
From scratch is a journey, not a purity test. Use what you have. Make what you can. Learn as you go.
I think this is the sweet spot.
You can be the girl who gets excited about hitting her protein goal… and the girl who gets equally excited when the strawberries in the garden finally ripen.
You can meal prep your chicken, lift heavy, make homemade yogurt, and eat chocolate peanut butter ice cream on the same day.
Healthy living doesn't have to fit into one aesthetic. Sometimes it's protein powder. Sometimes it's a garden basket. Sometimes it's both.
