Pumpkin Protein Baked Oats πŸŽƒ

Pumpkin Protein Baked Oats πŸŽƒ cover

Warm, cozy, pumpkin-spiced, and basically fall breakfast in casserole form.

Makes: 6 servings Prep Time: 10 minutes Bake Time: 30–35 minutes

If pumpkin pancakes are fall Saturday morning, baked oats are fall meal-prep morning.

This one comes out soft and cake-like in the middle, golden around the edges, and full of pumpkin spice. Make it once and you've got an easy breakfast waiting in the fridge for the next few mornings.

Ingredients

Optional Add-Ins

Make It

  1. Preheat your oven to 350°F and lightly grease an 8x8-inch baking dish.
  2. In a large bowl, whisk together the pumpkin, eggs, milk, Greek yogurt, maple syrup, and vanilla.
  3. Add the oats, protein powder, baking powder, pumpkin pie spice, cinnamon, and salt.
  4. Stir until everything is evenly combined.
  5. Fold in any add-ins you're using.
  6. Pour into the prepared baking dish and spread into an even layer.
  7. Bake for 30–35 minutes, until the center is set and the edges are lightly golden.
  8. Let it cool for 10–15 minutes before slicing.

How I Like It: Warm it up and top it with Greek yogurt, a drizzle of maple syrup, cinnamon, or a little peanut butter. Or eat it cold straight from the fridge. I'm not judging.

My Gym Girlies πŸ’ͺ

This is basically meal prep disguised as pumpkin cake.

The oats give you carbohydrates, while the eggs, Greek yogurt, and protein powder add protein to make breakfast more filling.

Want to push the protein higher? Add more Greek yogurt on top, serve it alongside eggs or turkey sausage, or use a little extra protein powder if your brand bakes well.

And if you're training in the morning, this can be an easy make-ahead carb + protein breakfast to have ready when you don't have time to cook. Cut it into six portions, refrigerate, and you've got breakfast handled.

My From-Scratch Girlies 🌿

This one can get as homemade as you want it to be.

Use your own pumpkin purée from the pumpkins you preserved in the fall. Use fresh eggs. Make your own yogurt. Pour in local maple syrup. Add homemade vanilla. Use your own pumpkin pie spice blend.

And if you're growing or buying oats locally and milling your own grains someday? Well, now you've taken baked oats to another level.

You don't need to make every ingredient from scratch for the recipe to count. Use the homemade things you have and the store-bought things you need. That's real-life from-scratch cooking.

For Both Girlies 🌿πŸ’ͺ

This is another one of those recipes where the two worlds fit together pretty naturally.

The gym girl gets a convenient breakfast with protein and carbs. The from-scratch girl gets a cozy seasonal recipe that can use homemade pumpkin, yogurt, eggs, and maple syrup.

And if you're not an oat girl yourself? Save this one for your oat-loving friends.

Strong body. Seasonal food. Cozy mornings.
